Chef Paul Qui Sampled Modern Asian Dishes Made with Kikkoman Sauces and Coatings

Kikkoman Sales USA, Inc. presented Chef Paul Qui as their guest chef at this year’s Culinary Institute of America (CIA) Worlds of Flavor conference: Asia and the Theater of World Menus. In addition to preparing umami-rich, izakaya-style small plates at Kikkoman’s booth during the festive walk-around World Marketplace event in the CIA’s historic Barrel Room, Chef Qui led a seminar on “Whole Fish ‘Butchering’: Creative Preparations of Hamachi” on Friday, April 24. Qui was also on stage demonstrating big-flavored Asian dishes in the opening night session: “Asia and the Theater of World Menus: Deep Roots, Innovative Expressions.” Throughout the conference, Chef Qui highlighted a modern Asian Cool™ approach to his preparations to show how Kikkoman sauces can be elegantly added to any dish.

At the Kikkoman booth, he demonstrated the versatility and flavor-enhancing magic of Kikkoman sauces in a range of big-flavored, small plates, many cooked over the searing heat of Japanese oak-kilned binchotan charcoal. Chef Qui showcased several of his dishes: Grilled Turnips with uni powder and his Spicy English Peas; Hamachi Kinilaw with a coconut dressing; Soy Powder Baked Potatoes; Roasted Sunchokes and Binchotan Hamachi dipped in lime juice, dashi, and soy sauce dressing.

All of Chef Paul’s dishes incorporated Kikkoman products, including Kikkoman Dehydrated Soy Sauce HN-1, Sriracha Hot Chili Sauce, Sweet Soy Glaze, Gluten-Free Tamari Soy Sauce and Organic Soy Sauce.

About Paul Qui

Paul Qui was named Esquire’s Chef of the Year 2014, and was selected as one of Food & Wine magazine’s 2014 Best New Chefs and Top 10 Empire Builders of 2012. Chef Qui is the recipient of the James Beard Foundation Award for Best Chef: Southwest 2012, winner of Top Chef Season 9, and winner of the San Pellegrino Cooking Cup 2013. Born in Manila, Philippines and trained in classic French and Japanese cuisine, Paul takes a modernist approach towards food, where there are no boundaries. Starting as an intern, Paul worked his way up the ranks of Uchi to Chef de Cuisine and later opened Uchiko as Executive Chef. While training under Uchi Chef and Owner Tyson Cole, Paul learned to adapt traditional Japanese dishes with an eye towards local flavor, all while incorporating influences from South East Asian and European cuisine.
