PHILADELPHIA’S ACCLAIMED COCKTAIL BAR,
IS NOW SERVING THE CITY’S ONLY COCKTAIL TASTING MENU

The Franklin, one of the best places in the city for a great drink, is excited to debut its first cocktail tasting menu from new Head Bartender Sara Justice. Drawing from her Pennsylvania Dutch heritage, Justice has created a five-course tasting to evoke a few favorite PA Dutch flavors such as Shoo Fly Pie and Birch Beer, aptly named “Dutch County Memories.” The tasting experience, which also includes two supplemental libations, is $65 per person, excluding tax and gratuity.
“What I try to create for people is a memorable experience and this menu is something that is both fun and personal for me,” says Justice, recently named one of Food & Wine’s Best New Mixologists.
For her tasting menu, Justice designed each course so that it builds in complexity as it progresses, much like a chef’s tasting menu. Guests who order the menu will be served by Justice and her talented staff who will give a brief description of each cocktail and encourage conversation and questions about the drinks. Justice will feature a new tasting menu every few months that will be inspired seasonally, centering on a familiar cuisine, place or culture. Justice, a 26-year-old native of Lancaster, PA, grew up working in restaurants, developing her love for the industry. At 21-years-old, she moved south to Atlanta, GA and began bartending. As her passion for the cocktail craft grew, she headed to New York City where she worked at PDT, a James Beard Award-winning cocktail bar lead by Jim Meehan, one of the industry’s most respected and best talents. After about a year in NYC, Justice headed south once more to take on the role of lead bartender at Atlanta’s popular Holeman & Finch. It was here Justice evolved her cocktail-making style, creating interesting drinks with complex layers, and experimented with batching her own ingredients. In 2014, Food & Wine magazine recognized her as one of their Best New Mixologists and Zagat named her one of Atlanta’s 30 Under 30.
This past fall, Justice returned to Philadelphia to join Aaron Siak, General Manager and to help evolve both bar spaces: The Franklin and The Upstairs at The Franklin. “Our goal has always been to be at the forefront of the cocktail game and the addition of Sara greatly increases our ability to do so,” says Siak. A new reservation system, updated food program and interior alterations are on the horizon for The Franklin and The Upstairs at The Franklin as the team formulates the next phase for each distinct bar.
The Franklin is open nightly from 5 p.m. until 2 a.m. The Upstairs at The Franklin is open from 6 p.m. until 2 a.m. on Friday and Saturday.
