Hot Cakes Molten Chocolate Cakery: Capitol Hill Location Opens Today

Autumn Martin, founder and chocolatier of Ballard’s beloved Hot Cakes Molten Chocolate Cakery, is excited to announce the opening of the Capitol Hill shop located at 1650 East Olive Way. The new Hot Cakes officially opens its doors today at 4pm.

The airy, light-filled dessert restaurant’s atmosphere has the perfect balance of sophistication and earthiness that Hot Cakes always does so well. Staying true to Hot Cakes’ packaging and branding, the second shop’s décor utilizes cream, black, dark wood, with a hint of red. Here, to accentuate the light brought in by the floor-to-ceiling windows, there’s a white marble countertop, rather than the black granite used in the Ballard shop. The walls are painted a warm cream and the kitchen door is the iconic Hot Cakes red. The cabinetry is white, with dark walnut shelving and tabletops.

The Capitol Hill location has the same full-wall chalkboard menu and polished concrete floors as Ballard, as well as the signature black and cream gingham wallpaper that echoes the molten chocolate cake packaging. There are three especially exciting features of the Capitol Hill shop: an outdoor fire pit for roasting s’mores, a vintage black and white photo booth, and an all-brass, custom-built lit number sign to alert guests when their order is ready.

There are seats for 35 inside the 2,200 square-foot space, at a combination of small tables, window bar seats, and large communal table. There are an additional 25 seats outside, under cover, along with the fire pit, which is ringed by logs and a bench for gathering and storytelling. There are also little hibachi grills for roasting s’mores indoors right at your table.

There’s more space in the new shop for retail items—all of Hot Cakes great confections will be on offer as well as Hot Cakes tote bags, sweatshirts, and camp mugs, plus some of Martin’s favorite outdoor gear like wool blankets. Everything you need for an impromptu camping adventure or cozy picnic, available right in the shop!

As for the menu, it will be similar to Ballard’s, plus some fun additions. The Hot Cakes team has developed a Salted Caramel Pudding to keep the stellar Dark Chocolate Pudding company, and—wait for it—there will be soft-serve ice cream with an all-organic smoked chocolate magic shell! There will be an array of crunchy, candied bits to top the soft-serve, like potato chips, cacao nib toffee, peanut butter fudge, fresh fruit, and Hot Cakes’ caramel sauces.

To go along with all the treats, there will be a new lineup of batched cocktails ready to go at the counter, plus a selection of beer and wine. Hot Cakes will continue to serve the award-winning Blue Star espresso from Washington’s Methow Valley.

The additional space has given Martin more room to play with new items and bring in more of the Northwest flavors she holds dear. She was delighted to put in the outdoor fire pit, as it really brings a slice of the wilderness adventure experience right into the bustling urban neighborhood. Martin’s favorite way to enjoy her cakes is baked in the coals of a campfire, savored after a long day hiking or surfing. She encourages people to take Hot Cakes with them on their adventures—but also loves bringing the flavors of the outdoors in, with creations like her smoky chocolate and nettle caramel sauce, which Martin forages for herself every spring.

Martin feels very humbled and grateful to carry on the tradition of desserts on the very ground that supported B&O Espresso for many years. She looks forward to bringing her thoughtful, organic, wilderness-inspired desserts to the west side of Capitol Hill.
